GrandOrgue is a pipe organ simulator. Instead of generating tones by synthesis, it plays back recordings of individual organ pipes, organised into sample sets that describe a particular instrument: its stops and ranks, its manuals and pedalboard, and the couplers between them. The sample sets are separate from the program itself and must be obtained and installed by the user, so what the software can sound like depends entirely on which set is loaded.

In use the program presents the console of the loaded instrument — drawstops or tabs, keyboards, and combination controls — and responds to MIDI input, typically from an external keyboard or pedalboard, sending the mixed result to the computer's audio output. Because playback consists of reading and mixing many samples at once, the demands placed on processor, memory and storage scale with the size and detail of the sample set rather than with the program.
